Amazing Eggs

How do you enjoy to start your day? Perhaps in the silent early morning you enjoy a cup of coffee while watching the day break in your favorite window. I enjoy waking up to my children running into my room and climbing into my bed for morning snuggles. When the infant and I have a good night I might wake up earlier then everyone.

I roll Will onto her side and allow her to snuggle into daddy while Sam the cat will try to get into my pre-warmed spot. I will sneak out of the room as if I was stealing the worlds most precious diamond. The house will be still and quiet with sometimes television sounds out of the children’s room. Immediately coffee will be brewed, the sink filling up with dish water, and I check my meal plan to decide if I really want oatmeal for breakfast or something different.

Amazing eggs, sausage links and hashbrowns.

Today I wanted a local breakfast chain but my wallet would not allow it to be done also who wants to get pants on for just some breakfast? Not us. I believe after you reach a certain number of children you begin to muse if it is really worth the tantrums of a broken routine. I pulled out of the storeroom dried potato flakes and filled up the jar with hot water to allow them to soak for at least twelve minutes. I could grate the potato’s, rinse the starch, press out the liquid and begin to slowly cook the potatoes. Nah not this morning.

I pulled out the sausage from the freezer because I am not prepared and let it sit out to get….. kind of defrosted. Alright alright! They were still frozen solid when I cooked them. I wanted to do a nice over easy egg but Wulf had convinced me to make my ‘Amazing Eggs’ or in Wulf’s words “The eggs with the green stuff.”.

Here is the recipie of those famous eggs around my house. I will add a one person recipe below also because I realize that not everyone eats eight eggs at one time.

In a bowl I put in 1/4tsp of Garlic Salt,1/4 tsp black pepper, 1/4 tsp Onion powder, 1/2 tsp of Parsley flakes (And why yes I had almost forgotten it.), and a 1/2 tsp of fresh green onion.

In another bowl I mixed together 1/4 cup of sour cream and 1/4 cup of heavy whipping cream. I mixed it together until it was all combined then I added my seasoning and 7 eggs. You can add more eggs if you find the flavor to be too ‘amazing’. Whisk it together until it looks well combined.

In a pan heat up some butter until melted make sure your heat is to medium heat to prevent the eggs from burning or the butter. Slowly pour in your eggs and begin to mix in the eggs and butter together. This will allow them to be soft and fluffy. Slow and low will create creamy and mouth watering eggs that can make anyone want to eat them.


There you go! Amazing eggs that everyone will ask for time and time again. To be extra you could top with more green onions and parsley flakes but they are good just the way they are. Also… did you see my butter dish? It holds four sticks of butter at a time. If you are like me I put butter on everything! I will include a link to the butter dish.


Amazing Eggs for many

  • 7-9 eggs
  • 1 tbsp Butter
  • 1/4 cup of Sour Cream
  • 1/4 cup of Heavy Whipping Cream
  • 1/4tsp Garlic Salt
  • 1/4tsp Ground Black Pepper
  • 1/4tsp Onion Powder
  • 1/2tsp Dried Parsley Flakes
  • 1/2 tsp Sliced Green Onion

In a mixing bowl whisk together the sour cream and heavy whipping cream. Add into the bowl pepper, garlic salt, onion powder, green onions, eggs and parsley flakes. Whisk until eggs and cream are combine. On medium heat melt the butter, pour in the egg mixture. Stir as if your life depended on it and to combine the eggs with the melted butter. Once cooked to your desired egg done-ness serve. If you desire garnish with extra green onions and parsley.


Amazing Eggs for one

  • 2 eggs
  • 1 tbsp Butter
  • 1/2 tsp Sliced Green Onions
  • 1/2 tsp Dried Parsley
  • A sprinkle of Garlic Salt, Onion powder, and Ground black pepper.
  • 1 tbsp Sour cream
  • 1 tbsp heavy whipping cream

In a mixing bowl whisk together the sour cream and heavy whipping cream. Add into the bowl pepper, garlic salt, onion powder, green onions, eggs and parsley flakes. Whisk until eggs and cream are combine. On medium heat melt the butter, pour in the egg mixture. Stir as if your life depended on it and to combine the eggs with the melted butter. Once cooked to your desired egg done-ness serve. If you desire garnish with extra green onions and parsley.
